Creamy Butternut Squash Pasta Sauce

I love a change of pace and Creamy Butternut Squash Pasta Sauce hits the spot every time! My kids think this sauce is so yummy and rave about it every time I make it. The best part is that it is so easy to make and comes together quickly too.

There are many ways to cook butternut squash. My favorite way to prepare butternut squash (and other squashes) is to simply cut the squash in half, scoop out the seeds, wrap in foil, and bake in pan on 250 F for 3-4 hours. Other people omit wrapping in foil and simply place in the microwave to cook for 10-20 minutes (cooking time depends on your appliance). Either way, it tastes great and you can't go wrong. After the squash is cooked thoroughly, simply scoop out the flesh from the skin. Creamy Butternut Squash Pasta Sauce

Ingredients

  • 4 cups cooked butternut squash (choose a 2.5-3 pound butternut squash)
  • 1 white onion, chopped
  • 5 cloves garlic, minced
  • 1/2 teaspoon ground black pepper
  • 1 Tablespoon prepared mustard
  • 1 Tablespoon chopped fresh basil
  • 2 cups fresh cream (you can use sour cream or heavy whipping cream instead)
  • 2 cups shredded mozzarella cheese
  • 1 Tablespoon olive oil

Directions

In a large skillet, heat olive oil over medium heat. Saute onions and garlic for 2-3 minutes or just until onions are translucent and begin to turn golden. Add squash, black pepper, prepared mustard, and fresh basil. Stir to combine. Add fresh cream and stir. Remove from heat and transfer to a medium sized bowl. Using a stick blender or a regular blender, blend sauce until it is creamy (a few small chunks are okay). You may have to add a little milk or cream if the sauce is too thick. While the sauce is still very warm add the cheese.
