Now on to today’s recipes!  All of these recipes will feature at least one “super food” that is perfect for our growing kids (and for us too!)

Sausage and Egg Breakfast Roll-Ups

Shopping List:

  • 1 box Sausage Links
  • Eggs
  • Salt & Pepper to taste
  • Cheddar Cheese, shredded
  • 1 cup Baby Spinach
  • White Corn or Flour Tortillas

Instructions:

  • Using a large skillet, cook the sausage links on medium-high heat, remove from pan
  • In a mixing bowl, whisk together the eggs with a splash of water, season with salt & pepper
  • Cook eggs in the same pan as the sausage links
  • Add the spinach with about 2 minutes left on the eggs
  • Remove from heat
  • Add eggs and spinach to center of tortilla
  • Top with shredded cheese and one sausage link
  • Roll up with seam side down on a baking sheet with parchment paper
  • Bake for 10-15 minutes or until golden brown

Oatmeal Yogurt Cups

Another great option for a kids breakfast that includes at least 2 “brain foods” is this recipe for Oatmeal Yogurt Cups.

Apple Peanut Butter Slices

Shopping List

  • 1 Apple
  • Peanut or Almond Butter
  • Nutella
  • Raisins
  • Dried Cranberries
  • Sliced Almonds

Instructions:

  • Slice apples into large round slices (core beforehand if you have a tool to do so)
  • Spread peanut butter, almond butter or Nutella on apple
  • Top with raisins or dried cranberries and almond slices
  • Can also use chocolate chips, M&M’s, or other types of nuts

Parmesan Kale Chips

Shopping List:

  • Bag of Organic Kale
  • 1/4 teaspoon Salt
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Parmesan Cheese, grated

Instructions:

  • Preheat oven to 350 degrees
  • Wash and separate kale into bite sized pieces
  • In a large bowl, add kale, olive oil and salt and mix
  • Add parmesan cheese and mix again
  • On a lined baking sheet, place kale in a single layer on top
  • Bake for 5-7 minutes or until edges start to brown
