I'm such a huge fan of roast chicken. I love eating it by itself or incorporating it into recipes. That's what I did with this Lemon Chicken with Pasta recipe.
This dish starts with roast chicken seasoned with a little lemon and combined with a few of my favorite one-pan ingredients.
What stresses me out about dinner is worrying about all of the dishes coming out at the same time. That's the beauty of a one-pan recipe.
You will love all of these fresh ingredients for this one-pan meal. Here's what you need:
Lemon Chicken with Pasta
Ingredients:
- 1 1/2 cups chicken from a Roast Chicken, cut into cubes
- 2 tablespoons Olive Oil
- 1/2 cup diced Yellow Onion
- 1 tablespoon Garlic, minced
- 2 1/2 cups Pasta (your choice)
- 1 cup Grape Tomatoes, cut in half
- 2 cups Chicken Broth
- Juice of 1/2 Lemon
- 1 cup Water
- 1 teaspoon Italian Seasonings
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 cup Mozzarella Cheese, shredded
Start with heating up the olive oil over a medium heat. Add the onions until almost translucent. Add the garlic for about 30 seconds until fragrant.
Add the rest of the ingredients including the chicken, pasta, tomatoes, chicken broth, water, juice of 1/2 lemon (or about a tablespoon of lemon juice), Italian Seasonings, salt & pepper.
Bring to a boil, uncovered for about 10 minutes.
Remove from heat and add the mozzarella cheese and cover for another 10 minutes.
Once the cheese is melted and liquid is absorbed into the pasta, your Lemon Chicken with Pasta is ready to serve!
