Easy Ritz Turtle Cookies

You won’t believe your taste buds when you sink your teeth into our Easy Ritz Turtle Cookies. Gooey caramel centers sandwiched between two Ritz crackers, and then covered in rich chocolate and sprinkled with chopped pecans–yummy! They’re so simple to make and yet they look like you spent hours putting them together. Just promise yourself you won’t hide the whole batch under your bed. (You can hide a few though.)

Seriously, turtle cookies are one of our favorite treats around here. We love that crackers give them an extra layer of flavor and texture. The sweet and salty combination is such a yummy compliment to our Easy Ritz Turtle Cookies. The best part about these cookies? No baking. It’s seriously really hard to mess this recipe up. Genius!

Easy Ritz Cracker Turtle Cookies

Ingredients

  • 1 1/2 sleeves of Ritz Crackers (about 44 total)
  • 24 caramels, unwrapped
  • 1 Tablespoon heavy whipping cream
  • 8 squares melting chocolate
  • 1/4 cup chopped pecans

Directions

Melt caramels in microwave oven according to package instructions. Ours took about three times on 30 seconds, stirring between each time. Be sure not to overcook or they will get hard. Add heavy whipping cream and stir into the melted caramels (this ensures the caramels will set up, but stay gooey and not get hard once they cool down).

Take a Ritz cracker and put about a teaspoon of caramel mixture on it. Place another Ritz cracker on top and sandwich it. Do this to all the remaining Ritz crackers.

Melt chocolate according to package instructions. This is usually about a minute, stir, and then 15 second intervals stirring between each until thoroughly melted.

Individually dip each Ritz cracker sandwich into chocolate. You can allow the extra chocolate to drip off…but why? Place on wax or parchment paper.

While chocolate is still melted and hasn’t set up on the crackers, sprinkle with chopped pecans. Place in freezer for 10 minutes or refrigerator for 30 minutes to set up. There you go–a mouthful of your wildest dreams. Now make sure you share some with the kids—mmmmkay?
