  • Saltine crackers

Instructions:

  • Pre-heat oven to 425 degrees
  • Line 2 cookie sheets with aluminum foil, spray with cooking spray
  • Arrange saltines salt-side down in single layer
  • In saucepan, melt the butter and brown sugar and boil until it turns a caramel color
  • Pour over crackers evenly
  • Bake for 3 to 5 minutes until bubbly – watch carefully
  • Remove from oven and pour the chocolate chips over crackers allowing them to melt a bit
  • Cut crackers with a knife
  • Serve

6 Can Mountain Soup

  • 1 jar Campbells Minestrone Soup

Garlic Parmesan Bites

  • 1 can refrigerator biscuits
  • 3 mozzarella cheese sticks
  • 4 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon parmesan cheese

Instructions:

  • Pre-heat oven to 400

  • Bake for 10 minutes
  • Melt butter in pan, add spices and parmesan cheese
  • Brush butter mixture on baked biscuits

Tomatillo Salsa

Shopping List:

  • 1 lb Tomatillos
  • 1 bunch of cilantro
  • 1 Serano pepper
  • 1 Avocado
  • 1 Lime
  • Kosher salt

Instructions:

  • Peel off outer leaves off the tomatillos and wash thoroughly. Once the leaves come off they might feel a little sticky which is completely normal. Give them a good wash! Cut them in quarters and set aside.
  • Wash the bunch of cilantro, tear off the stems and set aside
  • Wash the serrano pepper, cut into quarters and set aside
  • Cut the lime in half and set aside
  • Cut the avocado in half, remove pit and set aside
  • Place half the tomatillos, cilantro, serrano and avocado into a food processor, squeeze half the lime and zip it all up. Empty into a bowl and put the remaining ingredients into the food processor, zip it up and then empty into the bowl with the other ingredients. Add salt to taste.
  • Optional: If the salsa is too spicy for some, I sometimes put in a dollop of sour cream!
